Granola Bars Recipe
These easy but delicious gluten-free granola bars are great for lunchboxes or just with a cuppa of coffee as a mid-morning snack. Before shaping the bars, break them apart for homemade granola.

EQUIPMENT:

1 square baking tin

1 large mixing bowl

1 spoon for mixing

1 small saucepan
- 1 baking tray
INGREDIENTS:
- 100 g unsalted butter/plant-based spread
- 100 g sunflower seeds
- 100 g dried cranberries
- 100 g coconut sugar
- 50 g sesame seeds
- 3 tbsp honey/Maple syrup
- 1 tsp ground cinnamon
- 50 g chopped walnuts
- 200 g rolled gluten-free oats
INSTRUCTIONS:

Preheat the oven to 180C. Butter and line the base of your square baking tin.

In a large mixing bowl, mix the dry ingredients together until combined including the oats, walnuts, sesame seeds, cranberries, cinnamon and sunflower seeds.

Transfer the mixture into a roasting tin and put in the oven for 5-10 minutes to toast.

Meanwhile, warm the butter, honey and coconut sugar in a pan until the butter is melted. Then add the dry mixture of dried fruit, nuts and seeds from the over and mix until the oats are well coated.

Tip into the tin, press down lightly and bake for 30 minutes.

Cool in the tin and cut into bars.
