The Red kidney (Chilli) bean originated in Central America. Dried kidney beans must be soaked to hydrate them before cooking. Never, ever cook them in the water in which they have been soaked but make sure to drain and then rinse them well before putting into fresh water. The soaking water absorbs much of the ingredient that can upset the gut. And Red kidney beans are poisonous if not boiled for 20 mins during their initial cooking.
