Peanut Butter Cups

These homemade cups are a firm favourite for a delish everyday snack and late night treat.

  • 12 Silicone cupcake cases
  • Parchment paper
  • Mixing bowl
  • Spoon for mixing
  • Glass bowl


  • 100 g peanut butter
  • 150 g dark chocolate
  • 50 g milk chocolate
  • 1/2 tsp vanilla extract
  • 1 tbsp honey
  • 1 pinch salt
  • 1 tabsp cocoa nibs (plus extra for sprinkling)


  • Line 12 silicone cupcake cases with parchment paper.
  • In a bowl, beat the peanut butter, honey, vanilla extract and salt to combine. Stir in the cocoa nibs.
  • Roll the mixture into 12 equal-sized balls and flatten each one to approximately the diameter of the lined cupcake cases, Lay on a baking tray and freeze for 10-15 minutes while you prepare the chocolate.
  • Melt the chocolates into a glass bowl or in the microwave, then set aside to cool slightly.
  • Take the 12 lined cupcake cases and spoon 1 tsp of melted chocolate into the bottom of each case.
  • Remove the peanut butter discs from the freezer and carefully place one in each case, on top of the chocolate.
  • Divide the remaining chocolate between the cases, then tap them so that the chocolate settles in an even layer.
  • Sprinkle with cocoa nibs, then leave to cool and harden at room temperature.
