Granola Bars

These easy granola bars are great for lunchboxes or just with a cup of coffee as a mid-morning snack. Before shaping into bars, break apart for homemade granola.

Equipment

  • 1 square baking tin
  • 1 large mixing bowl
  • 1 Spoon for mixing
  • 1 small saucepan
  • 1 roasting tin

Ingredients
  

  • 100 g unsalted butter
  • 100 g sunflower seeds
  • 100 g dried cranberries
  • 100 g coconut sugar
  • 50 g sesame seeds
  • 3 tbsp honey
  • 1 tsp ground cinnamon
  • 50 g chopped walnuts
  • 200 g rolled gluten-free oats

Instructions
 

  • Preheat the oven to 180C. Butter and line the base of your square baking tin.
  • In a large mixing bowl, mix the dry ingredients together until combined including the oats, walnuts, sesame seeds, cranberries, cinnamon and sunflower seeds.
  • Transfer the mixture into a roasting tin and put in the oven for 5-10 minutes to toast.
  • Meanwhile, warm the butter, honey and coconut sugar in a pan until the butter is melted. Then add the dry mixture of dried fruit, nuts and seeds from the over and mix until the oats are well coated.
  • Tip into the tin, press down lightly and bake for 30 minutes.
  • Cool in the tin and cut into bars.
