Banana Bread

This one bowl wonder makes the most incredibly moist banana bread and is great for using up your overripe bananas

  • 1 loaf tin
  • 1 mixing bowl & spoon


  • 2-3 mashed ripe bananas
  • 2.5 cups almond flour
  • 0.5 cup coconut sugar
  • 100 g chocolate chips
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 eggs/2 flax eggs
  • pinch of salt
  • 0.3 cup melted unsalted butter


  • Preheat the oven to 180C. Butter and line your loaf tin with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth. Add the baking powder and melted butter to the bananas.
  • Stir in the coconut sugar, salt, eggs/flax egg, and vanilla extract.
  • Mix in the almond flour and combine everything into a smooth batter.
  • Gently fold in the chocolate chils and pour the mixture into your greased loaf tin.
  • Bake on the centre rack for 50 minutes or until the centre comes out clean using a toothpick.
  • Cool before slicing, and enjoy!
